Coffee Ice Cream Recipe
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/4 cup coffee beans (or 2 tbsp instant coffee granules)
- 5 large egg yolks
- 1 tsp vanilla extract
- **Pinch of salt
Instructions:
- Infuse the Cream with Coffee:
- In a medium saucepan, combine the heavy cream, whole milk, and coffee beans (or instant coffee granules).
- Heat over medium heat until the mixture is hot and just starting to simmer. Do not let it boil.
- Remove from heat and let the coffee beans steep for about 30 minutes to an hour. If using instant coffee, you can proceed to the next step after heating.
- Prepare the Custard:
- In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.
- Gradually pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.
- Cook the Custard:
- Pour the mixture back into the saucepan and cook over low heat, stirring constantly with a wooden spoon or a heat-resistant spatula.
- Cook until the custard thickens enough to coat the back of the spoon. This should take about 8-10 minutes. Be careful not to let it boil.
- Strain and Cool the Custard:
- If you used coffee beans, strain the custard through a fine-mesh sieve to remove the beans.
- Stir in the vanilla extract and a pinch of salt.
- Let the custard cool to room temperature, then cover and refrigerate until thoroughly chilled, at least 4 hours or overnight.
- Churn the Ice Cream:
- Once the custard is completely chilled, pour it into your ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
- Freeze the Ice Cream:
- Transfer the churned ice cream to an airtight container.
- Place the container in the freezer and let the ice cream harden for at least 2 hours before serving.
Tips:
- For a stronger coffee flavor, increase the amount of coffee beans or instant coffee granules.
- Add mix-ins such as chocolate chips, caramel swirls, or crushed cookies during the last few minutes of churning for added texture and flavor.
- Serve with a drizzle of chocolate or caramel sauce, whipped cream, or a sprinkle of cocoa powder for an extra special treat.
